Preparation
- In a mixing bowl, combine the cottage cheese, flour, egg, salt, and baking powder. If you’re using any herbs or spices, add them now. Mix until you have a soft dough.
- On a lightly floured surface, knead the dough gently for a minute or so until it’s smooth. Be careful not to overwork it.
- Divide the dough into equal portions, typically about 6-8 pieces, depending on how large you want your flatbreads.
- Roll each piece into a ball and flatten it using a rolling pin or your hands into circles about 1/4 inch thick.
Cooking
- Heat a skillet over medium heat and add a splash of oil.
- Once the skillet is hot, place the flatbread in and cook for 2-3 minutes on each side until golden brown and puffy.
Serving
- Serve the flatbreads warm as a side dish, or use them as wraps with your favorite fillings.
Notes
Experiment with flours and add flavorful mix-ins to customize. Store leftovers in an airtight container for up to 3 days or freeze for up to 1 month.
