  • 1 cup cottage cheese
  • 1 cup all-purpose flour Can substitute with whole wheat for a healthier version.
  • 1 large egg
  • 0.5 teaspoon salt
  • 0.5 teaspoon baking powder

Method
 

Preparation
  1. In a mixing bowl, combine the cottage cheese, flour, egg, salt, and baking powder. If you’re using any herbs or spices, add them now. Mix until you have a soft dough.
  2. On a lightly floured surface, knead the dough gently for a minute or so until it’s smooth. Be careful not to overwork it.
  3. Divide the dough into equal portions, typically about 6-8 pieces, depending on how large you want your flatbreads.
  4. Roll each piece into a ball and flatten it using a rolling pin or your hands into circles about 1/4 inch thick.
Cooking
  1. Heat a skillet over medium heat and add a splash of oil.
  2. Once the skillet is hot, place the flatbread in and cook for 2-3 minutes on each side until golden brown and puffy.
Serving
  1. Serve the flatbreads warm as a side dish, or use them as wraps with your favorite fillings.

Notes

Experiment with flours and add flavorful mix-ins to customize. Store leftovers in an airtight container for up to 3 days or freeze for up to 1 month.
