Ingredients
  

For the bagels
  • 1 cup cottage cheese
  • 2 cups all-purpose flour Can substitute with whole wheat flour.
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 large egg
  • 1 tbsp olive oil For dough and brushing.
Optional toppings
  • seeds (poppy, sesame)
  • herbs (rosemary, thyme)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the flour, baking powder, and salt. Stir until well mixed.
  3. In another bowl, whisk together the cottage cheese, egg, and olive oil.
  4. Gradually add the wet mixture to the dry ingredients, stirring until a dough forms.
  5. Turn the dough onto a floured surface and knead gently for about 1-2 minutes.
  6. Divide the dough into four equal pieces, roll each piece into a ball, and poke a hole in the center.
  7. If desired, brush the tops with olive oil and sprinkle with your favorite toppings.
Baking
  1. Place the bagels on the prepared baking sheet and bake for 20-25 minutes, or until golden brown.
  2. Allow them to cool for a few minutes before enjoying.

Notes

Best enjoyed fresh but can be stored in an airtight container at room temperature for up to 2 days. Freeze for up to 3 months and reheat at 350°F (175°C) for about 5-10 minutes.
