Preparation
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.
Mixing
- In a large bowl, cream together the softened butter and sugar until light and fluffy, about 3-4 minutes with an electric mixer.

- Add the cottage cheese, egg, and vanilla extract to the mixture and beat until well combined.

- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, stirring until just combined. Be careful not to overmix!
Scoop and Shape
- Use a spoon or cookie scoop to drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
- Place the cookies in the oven and bake for 15-18 minutes, or until the edges are lightly golden.
Cooling
- Once baked, allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Store cookies in an airtight container at room temperature for up to 3 days. They can be frozen for up to 2 months and reheated in the microwave for 10-15 seconds.
