  • 1 cup cottage cheese Can be substituted with ricotta cheese.
  • 1 cup flour
  • 1/2 cup sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.
Mixing
  1. In a large bowl, cream together the softened butter and sugar until light and fluffy, about 3-4 minutes with an electric mixer.
Combining Ingredients
  1. Add the cottage cheese, egg, and vanilla extract to the mixture and beat until well combined.
Dry Ingredients
  1. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, stirring until just combined. Be careful not to overmix!
Scoop and Shape
  1. Use a spoon or cookie scoop to drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
  1. Place the cookies in the oven and bake for 15-18 minutes, or until the edges are lightly golden.
Cooling
  1. Once baked, allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to 3 days. They can be frozen for up to 2 months and reheated in the microwave for 10-15 seconds.
