  • 1 cup cottage cheese Use fresh cottage cheese
  • 3 large eggs, separated Egg whites whipped to stiff peaks
  • 1/4 teaspoon cream of tartar Helps stabilize the egg whites

Method
 

Preparation
  1. Preheat your oven to 300°F (150°C).
  2. In a mixing bowl, add the egg whites and cream of tartar. Using an electric mixer, whip the egg whites until stiff peaks form, about 5-7 minutes.
  3. In another bowl, combine the cottage cheese and egg yolks. Mix until smooth, adding a pinch of salt or any spices if desired.
  4. Gently fold the whipped egg whites into the cottage cheese mixture, being careful not to deflate the egg whites.
  5. Line a baking sheet with parchment paper. Use a spoon to shape the batter into small clouds or your preferred shapes.
Baking
  1. Place the baking sheet in the oven and bake for 25-30 minutes, or until the tops are golden brown.
  2. Allow the bread to cool before using. Enjoy fresh or store for later.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze slices between parchment paper for up to 2 months. Reheat in a toaster for 3-4 minutes or in an oven for about 10-12 minutes.
