Preparation
- Preheat your oven to 300°F (150°C).
- In a mixing bowl, add the egg whites and cream of tartar. Using an electric mixer, whip the egg whites until stiff peaks form, about 5-7 minutes.
- In another bowl, combine the cottage cheese and egg yolks. Mix until smooth, adding a pinch of salt or any spices if desired.
- Gently fold the whipped egg whites into the cottage cheese mixture, being careful not to deflate the egg whites.
- Line a baking sheet with parchment paper. Use a spoon to shape the batter into small clouds or your preferred shapes.
Baking
- Place the baking sheet in the oven and bake for 25-30 minutes, or until the tops are golden brown.
- Allow the bread to cool before using. Enjoy fresh or store for later.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze slices between parchment paper for up to 2 months. Reheat in a toaster for 3-4 minutes or in an oven for about 10-12 minutes.
