Preparation
  1. Add the cottage cheese to a blender or food processor. Blend until smooth and creamy without any lumps—about 1-2 minutes.
  2. Add cocoa powder, sweetener of choice (honey or maple syrup), vanilla extract, and a pinch of salt to the blender. Blend together until fully combined and there are no visible chocolate lumps.
  3. Taste the mousse and adjust sweetness by adding more honey or syrup if desired. Blend again.
  4. Scoop the mousse into individual serving dishes or a large bowl and place it in the refrigerator for at least 30 minutes to firm up.
  5. Serve chilled with your choice of toppings like whipped cream, fresh berries, or chocolate shavings.

Notes

This mousse can be stored in an airtight container in the refrigerator for up to 3 days. It's best enjoyed cold, and reheating is not necessary.
