  • 2 large eggs
  • 1/2 cup almond flour Can be substituted with coconut or gluten-free flour.
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • as needed cooking spray or oil For greasing the waffle maker.

Preparation
  1. Preheat your waffle maker according to the manufacturer’s instructions.
  2. In a mixing bowl, combine the cottage cheese, eggs, almond flour, baking powder, salt, and pepper. Stir until the mixture is smooth and well combined.
  3. Ensure the batter is thick yet pourable. If it’s too thick, you can add a splash of water or an extra egg.
Cooking
  1. Lightly coat the waffle maker with cooking spray or oil.
  2. Pour the batter into the center of the preheated waffle maker. Close the lid and cook for 3-4 minutes or until golden brown.
  3. Carefully remove the chaffle with a spatula and serve immediately while hot!
Serving
  1. Top with your favorite toppings, such as fresh herbs, cheese, or sautéed vegetables.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days or freeze for up to a month. Reheat in a toaster or oven at 350°F (175°C) for about 5-7 minutes.
