Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the cottage cheese, eggs, almond flour, baking powder, and a pinch of salt. Stir until well mixed.
  3. Gently fold in the fresh blueberries.
  4. Line a baking sheet with parchment paper.
  5. Dollop the mixture onto the prepared baking sheet, leaving space between each cloud.
Baking
  1. Bake in the oven for about 20 minutes, or until the tops are golden and firm.
  2. Let the cloud bread cool for a few minutes before serving.

Notes

This bread pairs well with oatmeal, fruit salad, or Greek yogurt. Can be stored in an airtight container in the fridge for up to three days.
