- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or non-stick spray.
- In a large mixing bowl, combine the cottage cheese, eggs, vanilla extract, honey (or maple syrup), and melted butter. Whisk until smooth.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix!
- Carefully fold in the blueberries, ensuring they are evenly distributed throughout the batter.
- Pour the batter into the prepared loaf pan, smoothing out the top. Bake for about 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
Notes
Wrap well in plastic wrap or aluminum foil to store in the refrigerator for up to a week. Freeze slices in a freezer-safe bag for up to three months. Reheat in the microwave or toaster oven.
