Wet Ingredients
  • 1 cup cottage cheese (preferably full-fat for extra moisture) Use full-fat for a richer texture.
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup honey or maple syrup Choose according to preference.
  • 1/2 cup sugar
  • 1/2 cup melted butter Can substitute with oil if desired.
Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Fruit
  • 1 cup fresh blueberries (or frozen, if necessary) If using frozen, do not thaw.

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or non-stick spray.
  2. In a large mixing bowl, combine the cottage cheese, eggs, vanilla extract, honey (or maple syrup), and melted butter. Whisk until smooth.
  3. In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix!
  4. Carefully fold in the blueberries, ensuring they are evenly distributed throughout the batter.
  5. Pour the batter into the prepared loaf pan, smoothing out the top. Bake for about 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  6. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!

Notes

Wrap well in plastic wrap or aluminum foil to store in the refrigerator for up to a week. Freeze slices in a freezer-safe bag for up to three months. Reheat in the microwave or toaster oven.
