  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, finely chopped
Dressing
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
Garnish
  • Fresh parsley or cilantro for garnish

Preparation
  1. Start by rinsing and draining the chickpeas. Chop the cherry tomatoes, cucumber, and red onion.
  2. In a large bowl, combine the cottage cheese, chickpeas, tomatoes, cucumber, and red onion.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad mixture.
  4. Gently toss everything together until well mixed. Taste and adjust seasoning if necessary.
  5. Finally, sprinkle fresh parsley or cilantro on top for a splash of color and added flavor.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Consider separating ingredients for meal prep to keep everything fresh.
