Preparation
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicon mat to avoid sticking.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the texture is light and fluffy. This typically takes about 2-3 minutes.
  3. Beat in the eggs, one at a time, then mix in the vanilla extract until fully combined.
  4. In another bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually blend this dry mixture into the wet mixture until just incorporated. Avoid overmixing!
  5. Gently fold in the chocolate chips using a spatula.
  6. Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie since they will spread.
  7. Top each cookie with an extra sprinkle of chocolate chips and colorful sprinkles for that cosmic finish.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges appear set but the center is still chewy.
  9. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For perfect cookies, always use softened butter. If you're looking for a healthier sugar replacement, consider coconut sugar, but it may alter the flavor. Store in an airtight container for up to a week; can be frozen for up to three months.
