Preparation
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicon mat to avoid sticking.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the texture is light and fluffy. This typically takes about 2-3 minutes.
- Beat in the eggs, one at a time, then mix in the vanilla extract until fully combined.
- In another bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually blend this dry mixture into the wet mixture until just incorporated. Avoid overmixing!
- Gently fold in the chocolate chips using a spatula.
- Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie since they will spread.
- Top each cookie with an extra sprinkle of chocolate chips and colorful sprinkles for that cosmic finish.
- Bake in the preheated oven for 10-12 minutes, or until the edges appear set but the center is still chewy.
- Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For perfect cookies, always use softened butter. If you're looking for a healthier sugar replacement, consider coconut sugar, but it may alter the flavor. Store in an airtight container for up to a week; can be frozen for up to three months.
