  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) cream-style corn
  • 1 cup sour cream
  • 1/2 cup butter, melted
  • 1 box (8.5 oz) cornbread mix
  • 1 cup shredded cheese (optional) For added flavor

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the drained corn, cream-style corn, sour cream, and melted butter. Mix until well combined.
  3. Stir in the cornbread mix until just incorporated. Don’t overmix!
  4. If you’re feeling cheesy, fold in the shredded cheese.
  5. Add salt and pepper to taste.
  6. Pour the mixture into a greased baking dish, spreading evenly.
Baking
  1. Bake for 45-50 minutes or until the top is golden brown and set.
  2. Let it cool for a few minutes before serving.

Notes

You can substitute sour cream with Greek yogurt for a lighter option. Monitor baking time as it may vary by oven. Avoid overmixing to keep the casserole light and fluffy.
