  • 2 pieces boneless, skinless chicken breasts
  • 1 cup seasoned breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1 cup homemade or store-bought marinara sauce
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Season chicken breasts with salt and pepper.
  3. In a shallow bowl, combine seasoned breadcrumbs and Parmesan cheese. Dredge each chicken breast in the breadcrumb mixture until fully coated.
Cooking
  1. In a large oven-safe skillet, heat olive oil over medium-high heat. Once hot, add the breaded chicken breasts and cook until they are golden brown, about 3-4 minutes per side.
  2. In a small bowl, mix cream cheese, shredded mozzarella, minced garlic, and a pinch of salt and pepper until creamy.
  3. Once the chicken is seared, top each piece with a generous amount of marinara sauce, then dollop the cheese mixture on top.
  4. Transfer the skillet to the preheated oven and bake for about 20 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
  5. Remove from oven, garnish with fresh parsley, and serve hot.

Notes

For best results, don’t skip the sear. Adjust the cheese according to your preference and consider adding sautéed vegetables for extra flavor.
