Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine ground chicken, breadcrumbs, chopped onions, bell pepper, egg, milk, ketchup, garlic powder, onion powder, oregano, salt, and pepper. Mix until well combined but avoid overmixing.
- Transfer the mixture to a loaf pan or shape it into a loaf on a lined baking sheet.
- Spread extra ketchup on top of the loaf for added sweetness and flavor.
Baking
- Place the meatloaf in the preheated oven and bake for about 50–60 minutes, or until the internal temperature reaches 165°F (74°C).
- Once cooked, let it rest for 10 minutes before slicing.
Notes
Adjust seasonings as desired. Consider adding grated carrot or zucchini for extra moisture. Wrap leftovers in plastic wrap or aluminum foil to keep them fresh.
