  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt

  • ¾ cup brown sugar
  • ¾ cup all-purpose flour
  • 1 tablespoon ground cinnamon
  • ½ cup cold unsalted butter

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add eggs and vanilla extract, mixing well until combined.
  3. In a separate bowl, whisk together all-purpose flour, baking powder, baking soda, ground cinnamon, and salt.
  4. Gradually add the dry mixture to the butter mixture, stirring until just combined.
  5. In a small bowl, mix together the brown sugar, flour, and cinnamon for the crumb topping. Cut in cold butter until the mixture resembles coarse crumbs.
  6. Scoop a tablespoon of cookie dough onto the prepared baking sheet, leaving enough space between each cookie. If using the crumb topping, sprinkle it generously over each cookie.
  7. Bake cookies for 10-12 minutes or until the edges are golden. Allow them to cool on the baking sheet for a few minutes before moving to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to five days. Freezing keeps them good for up to three months.
