Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add eggs and vanilla extract, mixing well until combined.
- In a separate bowl, whisk together all-purpose flour, baking powder, baking soda, ground cinnamon, and salt.
- Gradually add the dry mixture to the butter mixture, stirring until just combined.
- In a small bowl, mix together the brown sugar, flour, and cinnamon for the crumb topping. Cut in cold butter until the mixture resembles coarse crumbs.
- Scoop a tablespoon of cookie dough onto the prepared baking sheet, leaving enough space between each cookie. If using the crumb topping, sprinkle it generously over each cookie.
- Bake cookies for 10-12 minutes or until the edges are golden. Allow them to cool on the baking sheet for a few minutes before moving to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to five days. Freezing keeps them good for up to three months.
