Preparation
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or grease it lightly.
- In a mixing bowl, mash the bananas until smooth. Stir in the melted butter until well combined.
- Add the sugar, beaten egg, and vanilla extract, mixing until incorporated.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually mix this dry mixture into the banana mixture until just combined. Avoid overmixing!
- In a separate small bowl, prepare the streusel by combining brown sugar, flour, melted butter, and cinnamon. Mix until crumbly.
- Scoop the banana muffin batter into the prepared muffin tin, filling each cup about ¾ full. Top generously with the streusel mixture.
- Bake for 18-20 minutes or until a toothpick comes out clean. Allow to cool before serving.
Notes
Serve these muffins warm with butter or enjoy them chilled with coffee. Store in an airtight container for up to 3 days or freeze for longer storage.
