Baking the Cookies
- Preheat your oven to 350°F (180°C).
- In a medium mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Stir in the instant coffee granules until dissolved, then add the eggs and vanilla extract, mixing well.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Scoop the dough by the tablespoon and place on a parchment-lined baking sheet, leaving space between each cookie.
- Bake in the preheated oven for about 10-12 minutes or until edges are golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

For variation, consider a sprinkle of sea salt or chocolate drizzle. If time allows, refrigerate the dough for 30 minutes to enhance flavor.
