  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour Sifted for a lighter texture.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Method
 

Baking the Cookies
  1. Preheat your oven to 350°F (180°C).
  2. In a medium mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Stir in the instant coffee granules until dissolved, then add the eggs and vanilla extract, mixing well.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Scoop the dough by the tablespoon and place on a parchment-lined baking sheet, leaving space between each cookie.
  6. Bake in the preheated oven for about 10-12 minutes or until edges are golden.
  7. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For variation, consider a sprinkle of sea salt or chocolate drizzle. If time allows, refrigerate the dough for 30 minutes to enhance flavor.
