Begin by boiling a pot of salted water. Once it reaches a rolling boil, add the sliced potatoes and cook until tender, roughly 10-15 minutes.
In the same pot, add the cod fillet to the water during the last 10 minutes of potato cooking time. Cook the fish until it flakes easily with a fork.
Once both the potatoes and cod are done, drain them and let them cool slightly.
Slice the carrot and add it to a bowl along with the fresh peas, mixing them together with the cooled potatoes and flaked cod.
Season the salad with salt and pepper. For an extra flavor kick, drizzle lemon juice and toss in fresh herbs if desired.
Serve chilled or at room temperature for a refreshing meal!
