  • 4 pieces cod fillets Use other types of white fish if needed.
  • 1 can (14 oz) coconut milk Preferred brand for richness.
  • 2 tablespoons curry powder Adjust based on spice preference.
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste Adjust based on preference.
Garnish
  • Fresh cilantro For garnish

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a medium bowl, combine your coconut milk, curry powder, minced garlic, ginger, and a dash of salt and pepper. Whisk until well blended.
  3. Place the cod fillets in a greased baking dish and pour the coconut curry sauce over them, ensuring they’re well coated.
Cooking
  1. Bake in the preheated oven for 20-25 minutes until the cod is opaque and flaky.
  2. Garnish with fresh cilantro before serving.

Notes

Substitutions include other white fish like halibut or snapper. Check cod after 20 minutes to avoid overcooking. Store leftovers in an airtight container for up to 2 days or freeze for up to 3 months.
