Preparation
  1. In a mixing bowl, whisk together the coconut milk, chia seeds, maple syrup (or honey), vanilla extract, and a pinch of salt until well combined.
  2. Allow the mixture to sit for about 5 minutes, and then stir again thoroughly to ensure the chia seeds hydrate evenly.
  3. Cover the bowl or transfer the mixture to individual serving cups and refrigerate. Let it chill and set for at least 4 hours, preferably overnight.
