Ingredients
  

Pasta and Chicken
  • 8 ounces rotini pasta Use gluten-free pasta if needed.
  • 1 cup rotisserie chicken, shredded (Halal-certified) Chicken can be substituted with turkey or beef.
Vegetables
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red bell pepper, diced
  • ½ cup celery, diced
  • 1 cup romaine lettuce, chopped
Dressing
  • ½ cup mayonnaise A Halal-friendly alternative can be used.
  • 2 tablespoons lemon juice
  • to taste Salt
  • to taste Pepper
  • Optional: shredded cheese (such as cheddar or mozzarella)

Method
 

Preparation
  1. In a large pot, bring salted water to a boil and cook the rotini pasta according to the package instructions, usually about 8-10 minutes.
  2. While the pasta is cooking, wash and chop your vegetables—cherry tomatoes, cucumber, red bell pepper, celery, and romaine lettuce. Set them aside in a large mixing bowl.
  3. In a separate small bowl, whisk together the mayonnaise, lemon juice, salt, and pepper until smooth and well combined.
Combining
  1. Once the pasta is cooked, drain and rinse it under cold water to stop the cooking process.
  2. Add the cooled pasta to the bowl with the veggies. Add in the shredded rotisserie chicken.
  3. Gently fold in the prepared dressing to the pasta and veggie mixture until everything is evenly coated.
  4. If using cheese, sprinkle it in and toss lightly.
Chilling
  1. Cover and refrigerate the salad for at least 15 minutes before serving to allow the flavors to meld together.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. If freezing, texture may change but taste remains delicious. Thaw in the fridge and enjoy cold.
