Preparation
- In a large pot, bring salted water to a boil and cook the rotini pasta according to the package instructions, usually about 8-10 minutes.
- While the pasta is cooking, wash and chop your vegetables—cherry tomatoes, cucumber, red bell pepper, celery, and romaine lettuce. Set them aside in a large mixing bowl.
- In a separate small bowl, whisk together the mayonnaise, lemon juice, salt, and pepper until smooth and well combined.
Combining
- Once the pasta is cooked, drain and rinse it under cold water to stop the cooking process.
- Add the cooled pasta to the bowl with the veggies. Add in the shredded rotisserie chicken.
- Gently fold in the prepared dressing to the pasta and veggie mixture until everything is evenly coated.
- If using cheese, sprinkle it in and toss lightly.
Chilling
- Cover and refrigerate the salad for at least 15 minutes before serving to allow the flavors to meld together.
