Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour, sifted
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup water
  • 1/4 cup vegetable oil
  • 4 large eggs, separated Ensure egg whites are at room temperature for maximum volume.
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan with vegetable oil and line the bottom with parchment paper.
  3. In a medium bowl, sift together the all-purpose flour, baking powder, and salt. Set aside.
Mixing
  1. In a large mixing bowl, beat the egg whites with an electric mixer until soft peaks form.
  2. Gradually add half of the granulated sugar, beating until glossy and stiff peaks form.
  3. In another bowl, whisk the egg yolks, remaining sugar, water, vegetable oil, and vanilla extract until fully blended.
  4. Gradually incorporate the dry ingredients into this mixture, mixing until just combined.
Baking
  1. Gently fold the whipped egg whites into the yolk batter.
  2. Pour the batter into the prepared cake pan and spread evenly.
  3. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  4. Allow the cake to cool in the pan for about 10 minutes before transferring it to a cooling rack.
Serving
  1. Once cooled, serve the Cloud Cake plain or adorned with your favorite toppings.

Notes

For a lighter version, substitute half of the sugar with a sweetener of your choice. Ensure proper folding technique to maintain the airy texture.
