Preparation
- Preheat the oven to 350°F (175°C).
- Grease a 9-inch round cake pan with vegetable oil and line the bottom with parchment paper.
- In a medium bowl, sift together the all-purpose flour, baking powder, and salt. Set aside.
Mixing
- In a large mixing bowl, beat the egg whites with an electric mixer until soft peaks form.
- Gradually add half of the granulated sugar, beating until glossy and stiff peaks form.
- In another bowl, whisk the egg yolks, remaining sugar, water, vegetable oil, and vanilla extract until fully blended.
- Gradually incorporate the dry ingredients into this mixture, mixing until just combined.
Baking
- Gently fold the whipped egg whites into the yolk batter.
- Pour the batter into the prepared cake pan and spread evenly.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes before transferring it to a cooling rack.
Serving
- Once cooled, serve the Cloud Cake plain or adorned with your favorite toppings.
Notes
For a lighter version, substitute half of the sugar with a sweetener of your choice. Ensure proper folding technique to maintain the airy texture.
