Ingredients

For the custard
  • 6 large large egg yolks
  • 3/4 cup granulated sugar
  • 2/3 cup milk
For the filling
  • 1 1/4 cups heavy cream
  • 1 cup mascarpone cheese
For the coffee mixture
  • 1 1/2 cups brewed espresso (cooled)
  • 1 tablespoon coffee liqueur (optional)
For layering
  • 24 pieces ladyfinger cookies
  • Cocoa powder (for dusting)

Method

Preparation
  1. In a saucepan over medium heat, whisk together the egg yolks and granulated sugar until light and thick.
  2. Add the milk, continuously stirring until it thickens (about 10 minutes). Remove from heat and let it cool slightly.
Whipping the Cream
  1. In a separate bowl, whip the heavy cream until soft peaks form.
  2. Gently fold in the mascarpone cheese and the cooled custard until combined.
Layering the Dessert
  1. Combine the cooled espresso and optional coffee liqueur in a shallow dish.
  2. Quickly dip each ladyfinger in the coffee mixture and lay them in a 9x9 inch dish.
  3. Spread half of the mascarpone mixture over the ladyfingers.
  4. Add another layer of dipped ladyfingers and then top with the remaining mascarpone mixture.
Setting the Dessert
  1. Refrigerate the tiramisu for at least 4 hours (or overnight) to allow the flavors to meld together beautifully.
Serving
  1. Just before serving, dust with cocoa powder and enjoy your homemade Classic Tiramisu!

Notes

Ensure the eggs are at room temperature for better emulsification. Dip the ladyfingers quickly; they should be moist but not soggy. Use high-quality espresso and mascarpone cheese for the best flavor experience. Feel free to experiment with flavors; a splash of vanilla or almond extract can offer a new twist.
