Ingredients
  

Cookie Base
  • 1 cup unsalted butter, softened Use coconut cream as a substitute for a Halal-friendly option.
  • 2/3 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
Filling
  • 1/2 cup jam or preserves (e.g., raspberry, apricot) Feel free to experiment with different flavors.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
  3. Mix in the vanilla extract until well combined.
  4. In a separate bowl, whisk together the all-purpose flour and salt, then gradually add to the butter-sugar mixture, mixing until just combined.
  5. Scoop tablespoon-sized portions of dough, roll them into balls, and place them on the prepared baking sheet with space in between.
  6. Use your thumb to create a well in the center of each dough ball.
  7. Fill each thumbprint with your chosen jam or preserve.
Baking
  1. Bake in the preheated oven for 15-20 minutes or until the edges are lightly golden.
  2. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store in an airtight container at room temperature for up to 5 days, or freeze for up to 3 months. Reheat in a warm oven for a few minutes.
