Method
 

Preparation
  1. Wash and peel the potatoes, then cut them into 1-inch cubes.
  2. Place potatoes in a large pot, cover with water and add a pinch of salt.
  3. Bring water to a boil over high heat.
Cooking
  1. Once boiling, reduce heat to medium and let cook for about 10-15 minutes until fork-tender, but not mushy.
  2. Drain the potatoes and let cool for about 10 minutes.
Dressing Preparation
  1. In a medium bowl, mix mayonnaise, sugar, apple cider vinegar, mustard, salt, and black pepper until well combined.
Combining Ingredients
  1. In a large mixing bowl, add still-warm potatoes, diced celery, pickles (or relish), diced onions, and hard-boiled eggs (if using).
  2. Pour dressing over the potato mixture and gently fold until coated, preserving potato chunks.
Chilling
  1. Cover with plastic wrap and refrigerate for at least an hour to let flavors meld.
  2. Serve chilled and enjoy!
