Ingredients
  

Pasta
  • 8 ounces macaroni Cook until al dente
Dressing
  • 1 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Vegetables
  • 1 cup celery, diced
  • 1/2 cup red bell pepper, diced
  • 1/2 cup green onions, sliced
  • 1/2 cup peas (optional)

Method
 

Preparation
  1. Boil water in a large pot. Add the macaroni and cook according to package instructions, usually about 7-8 minutes until al dente.
  2. In a large bowl, mix the mayonnaise, apple cider vinegar, sugar, salt, and black pepper until well combined.
  3. Once the macaroni is cooked, drain it and rinse under cold water to cool down.
  4. Add the cooled macaroni to the dressing mixture. Toss in diced celery, red bell pepper, green onions, and peas (if using). Stir until everything is well coated.
  5. Cover the salad and refrigerate for at least 30 minutes before serving.

Notes

For a healthier version, try using Greek yogurt instead of mayonnaise. Let the salad sit for at least an hour before serving for the best flavor.
