Ingredients
  

Macaron Shells
  • 1 cup almond flour Ensure it's finely ground.
  • 1 ¾ cups powdered sugar Sifted.
  • 3 pieces egg whites At room temperature.
  • ¼ cup granulated sugar Gradually added.

Filling

Method
 

Preparation
  1. Preheat your oven to 300°F (150°C). Line two baking sheets with parchment paper.
  2. Optionally, prepare a piping bag with a round tip for easier filling.
Sift Dry Ingredients
  1. In a bowl, sift together the almond flour and powdered sugar to remove lumps. Repeat at least twice for a smooth texture.
Whip Egg Whites
  1. In a clean bowl, whisk egg whites until foamy.
  2. Gradually add granulated sugar and whisk until stiff peaks form.
  3. Add food coloring to achieve the desired hue.
Combine Mixtures
  1. Gently fold the sifted almond mixture into the egg whites to avoid deflating the meringue.
  2. Continue folding until the mixture flows like lava.
Pipe Macaron Shells
  1. Transfer the batter into the piping bag and pipe small, even circles on the lined baking sheets.
  2. Tap the baking sheets gently to remove air bubbles.
Rest
  1. Allow the piped macarons to rest for 30-60 minutes until a skin forms.
Bake
  1. Bake for 15-20 minutes, rotating sheets halfway through.
  2. They are ready when risen, have formed a 'foot', and look glossy.
Cool and Fill
  1. Allow to cool completely before removing from parchment paper.
  2. Pair similar-sized shells and fill with your chosen filling.
Enjoy
  1. Enjoy immediately or refrigerate for 24 hours for enhanced flavor.

Notes

Use aged egg whites for a stable meringue. Sifting is crucial for smooth shells. Avoid making on humid days, and feel free to experiment with flavors.
