For the cookies
  • 1 cup unsalted butter, softened Ensure butter is at room temperature.
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder Use high-quality cocoa for richer flavor.
  • 1 cup chopped walnuts or pecans (optional) Feel free to substitute with mini chocolate chips.
  • 1 cup powdered sugar for dusting

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a large mixing bowl, cream the softened butter with powdered sugar until light and fluffy.
  4. Mix in the vanilla extract until well incorporated.
  5. In another bowl, whisk together the all-purpose flour and cocoa powder, then gradually add this to the butter-sugar mix, stirring until fully combined.
  6. If desired, fold in the chopped walnuts or pecans.
  7. Roll the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet, leaving space in between.
  8. Bake for 10-12 minutes, until just set.
  9. Allow to cool slightly on the baking sheet, then transfer to a wire rack and dust with powdered sugar before serving.

Notes

To store, place cookies in an airtight container at room temperature for up to one week, or freeze for up to three months. To reheat, place in a preheated oven at 300°F (150°C) for about 5 minutes.
