Preparation
- Preheat your oven to 350°F (180°C).
- Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt until well mixed.
- Add in the eggs, milk, oil, and vanilla extract. Mix with a hand mixer on medium speed until smooth and combined—about 2 minutes.
- Stir in the boiling water (the batter will be thin, but that’s totally normal!).
Baking
- Divide the batter evenly between the prepared pans.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
Cooling and Serving
- Remove from the oven and let the cakes cool in the pans for about 10 minutes.
- Transfer the cakes to a wire rack to cool completely.
- Once cooled, frost with your favorite chocolate frosting, and enjoy!
Notes
Ensure to keep leftover cake properly stored in an airtight container in the refrigerator for up to a week. It freezes well for up to three months. Reheat slices in the microwave for 10-15 seconds.
