Ingredients
  

Dry Ingredients
  • 1 and 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 and 1/2 teaspoons baking powder
  • 1 and 1/2 teaspoons baking soda
  • 1 teaspoon salt
Wet Ingredients
  • 2 large eggs Use room temperature
  • 1 cup milk Use room temperature
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water This helps make the cake moist

Method
 

Preparation
  1. Preheat your oven to 350°F (180°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt until well mixed.
  4. Add in the eggs, milk, oil, and vanilla extract. Mix with a hand mixer on medium speed until smooth and combined—about 2 minutes.
  5. Stir in the boiling water (the batter will be thin, but that’s totally normal!).
Baking
  1. Divide the batter evenly between the prepared pans.
  2. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
Cooling and Serving
  1. Remove from the oven and let the cakes cool in the pans for about 10 minutes.
  2. Transfer the cakes to a wire rack to cool completely.
  3. Once cooled, frost with your favorite chocolate frosting, and enjoy!

Notes

Ensure to keep leftover cake properly stored in an airtight container in the refrigerator for up to a week. It freezes well for up to three months. Reheat slices in the microwave for 10-15 seconds.
