  • 2 cups cooked chicken, diced Make sure your chicken is cooked and cooled before dicing.
  • 1/2 cup mayonnaise You can substitute for Greek yogurt for a healthier twist.
  • 1/4 cup celery, chopped Chop the celery while the chicken cools.
  • 1/4 cup red grapes, halved Halve the grapes for easier mixing.
  • 1/4 cup almonds, sliced You can swap almonds for walnuts if desired.
  • 1 tablespoon lemon juice
  • Salt and pepper To taste.

Preparation
  1. Cook your chicken (grilled or boiled works best) and allow it to cool. Dice it into bite-sized pieces.
  2. Chop the celery and halve the red grapes.
Mixing
  1. In a large mixing bowl, combine the diced chicken, chopped celery, halved red grapes, and sliced almonds.
  2. In a small bowl, mix the mayonnaise, lemon juice, salt, and pepper to taste.
  3. Pour the dressing over the chicken mixture and stir gently until all ingredients are evenly coated.
Serving
