  • 3 pieces ripe bananas, mashed Use very ripe bananas with brown spots for the sweetest flavor.
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup sugar Can be reduced to 1/2 cup.
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 4×8 inch loaf pan or line it with parchment paper for easy removal.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir in the melted butter.
  3. Mix in the baking soda and salt. Then add the sugar, beaten egg, and vanilla extract, mixing well.
  4. Gently fold in the flour until you no longer see any dry bits; be careful not to overmix!
  5. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  6. Bake in the preheated oven for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven, let it cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely. Slice and enjoy!

Notes

To keep your banana bread fresh, wrap it in plastic wrap and store it at room temperature for up to 4 days. For longer storage, slice and freeze in a zip-top bag for up to 3 months. Reheat slices in the microwave or toaster.
