  • 3 pieces ripe bananas, mashed The riper, the better for sweetness.
  • 1/3 cup melted butter
  • 1/2 cup sugar Add more if you prefer it sweeter.
  • 1 piece beaten egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • a pinch salt
  • 1 cup all-purpose flour

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
  • In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir in the melted butter.
  • Add the sugar, beaten egg, and vanilla, and mix well.
  • Sprinkle the baking soda and salt over the mixture, then stir in the flour until just combined. Don't overmix!
  • Transfer the batter into the greased loaf pan.

Baking

  • Bake in the preheated oven for about 50 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Serve slices with a dollop of whipped cream or cream cheese; pairs well with coffee or tea. Store in an airtight container for 2-3 days or freeze for up to 3 months.
