  • 3 pieces ripe bananas, mashed The riper, the better for sweetness.
  • 1/3 cup melted butter
  • 1/2 cup sugar Add more if you prefer it sweeter.
  • 1 piece beaten egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • a pinch salt
  • 1 cup all-purpose flour

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir in the melted butter.
  3. Add the sugar, beaten egg, and vanilla, and mix well.
  4. Sprinkle the baking soda and salt over the mixture, then stir in the flour until just combined. Don't overmix!
  5. Transfer the batter into the greased loaf pan.
Baking
  1. Bake in the preheated oven for about 50 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Serve slices with a dollop of whipped cream or cream cheese; pairs well with coffee or tea. Store in an airtight container for 2-3 days or freeze for up to 3 months.
