Preparation
- Preheat your oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
- In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir in the melted butter.
- Add the sugar, beaten egg, and vanilla, and mix well.
- Sprinkle the baking soda and salt over the mixture, then stir in the flour until just combined. Don't overmix!
- Transfer the batter into the greased loaf pan.
Baking
- Bake in the preheated oven for about 50 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
Serve slices with a dollop of whipped cream or cream cheese; pairs well with coffee or tea. Store in an airtight container for 2-3 days or freeze for up to 3 months.
