  • 3 tablespoons olive oil
  • 1 teaspoon salt Adjust to taste.
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon dried herbs (like thyme or rosemary)

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C). Prepare a baking sheet lined with parchment paper or lightly greased.
Seasoning
  1. In a mixing bowl, combine olive oil, salt, black pepper, garlic powder, paprika, onion powder, and dried herbs.
Coating the Chicken
  1. Add chicken pieces into the bowl and massage the seasoning mixture into the chicken until each piece is covered evenly.
Baking
  1. Place the seasoned chicken pieces on the prepared baking sheet, skin-side up. Bake for about 40-45 minutes, until the internal temperature reaches 165°F (74°C) and the skin is crispy and golden.
Resting
  1. Remove the chicken from the oven and let it rest for about 5 minutes to allow the juices to redistribute.

Notes

Substitutions for dark meat can make it juicier. Avoid overcrowding on the baking sheet. For reheating, place in a preheated oven at 350°F (175°C) for about 15-20 minutes.
