Preparation
- Preheat your oven to 350°F (175°C).
- Grate the zucchini and squeeze out any excess moisture using a clean kitchen towel.
- In a large bowl, whisk together the vegetable oil, sugar, eggs, and vanilla extract until well combined.
- In another bowl, mix the flour, baking soda, salt, ground cinnamon, and nutmeg. Gradually add this mixture to the wet ingredients and stir until just combined.
- Gently fold in the grated zucchini until evenly distributed in the batter.
- In a small bowl, combine the brown sugar and 1 tablespoon of cinnamon and set aside.
Assembly and Baking
- Pour half of the batter into a greased 9×5-inch loaf pan. Sprinkle half of the cinnamon-sugar mixture on top.
- Pour the remaining batter on top and finish with the remaining cinnamon-sugar mixture. Use a knife to swirl everything together gently.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Let your bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
- Slice and enjoy!
Notes
For substitutions, you can use yellow squash instead of zucchini. Feel free to add chopped nuts or chocolate chips for extra texture and flavor. Do not overmix the batter after adding the flour to maintain fluffiness.
