Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/3 cup light brown sugar packed
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
Filling
  • 2 medium Granny Smith apples peeled and diced

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a small bowl, mix together the light brown sugar and ground cinnamon for the cinnamon sugar mixture.
  3. In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt.
  4. In another bowl, mix the melted butter, eggs, vanilla extract, and milk until well combined.
  5. Pour the wet mixture into the dry ingredients, stirring until just combined. Avoid overmixing.
  6. Gently fold in the diced apples.
  7. Pour half of the batter into the prepared loaf pan and sprinkle with half of the cinnamon-sugar mixture. Add the remaining batter and top with the rest of the cinnamon-sugar mixture.
  8. Use a knife to swirl the cinnamon mixture into the batter.
Baking
  1. Place the loaf in the oven and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let it cool in the pan for a few minutes before transferring it to a wire rack to cool completely.

Notes

Store leftovers in an airtight container at room temperature for up to three days, or in the refrigerator for up to a week. For longer storage, freeze for up to three months.
