Ingredients
  

Wet Ingredients
  • 1 cup milk Any type of milk can be used.
  • 1 teaspoon vanilla extract For extra flavor.
  • 2 large eggs
  • ¼ cup melted butter Unsalted butter is preferable.
Dry Ingredients
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon Plus additional for topping.
  • ½ cup granulated sugar
Topping
  • 2 tablespoons sugar Mix with cinnamon for topping.
  • 1 teaspoon cinnamon For sprinkling on top.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a muffin pan or line it with muffin liners.
  2. In a large bowl, whisk together the milk, eggs, vanilla extract, and melted butter until well combined.
  3. In another bowl, mix together the flour, baking powder, cinnamon, and granulated sugar.
  4. Gradually stir the dry ingredients into the wet ingredients until just combined. Don’t overmix—it’s okay if there are a few lumps!
  5. Spoon the batter into the muffin cups, filling each about two-thirds full.
  6. Generously sprinkle the cinnamon sugar mixture on top of each muffin.
  7. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the muffins to cool for a few minutes before serving warm, maybe with a side of maple syrup for dipping.

Notes

Check your oven as baking times may vary. Muffins can be stored in an airtight container for up to three days or frozen for up to three months. Reheat in the microwave or oven.
