Preparation
- Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with muffin liners.
- In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, and ground cinnamon until well combined.
- In a separate bowl, mix the milk, vegetable oil, egg, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not overmix; it's okay if there are a few lumps.
- Divide the batter evenly among the prepared muffin cups, filling them about 2/3 full.
- Place the muffin tray in the preheated oven and bake for 15 to 18 minutes, or until a toothpick inserted into the center comes out clean.
Coating
- In a shallow bowl, mix together the granulated sugar and ground cinnamon.
- Once out of the oven, let the muffins cool for about 5 minutes. While they are still warm, brush them lightly with melted butter and roll them in the cinnamon sugar mixture.
Serving
- Place the coated muffins on a wire rack and let them cool slightly before serving.
Notes
Store in an airtight container at room temperature for up to 3 days. For longer storage, freeze for up to 2 months. To reheat, microwave for a few seconds or place in a warm oven for 5-10 minutes.
