Ingredients
  

Muffin Mixture
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
Coating
  • 1/4 cup melted butter For coating
  • 1/2 cup granulated sugar For coating
  • 1 tbsp ground cinnamon For coating

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with muffin liners.
  2. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, and ground cinnamon until well combined.
  3. In a separate bowl, mix the milk, vegetable oil, egg, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not overmix; it's okay if there are a few lumps.
  5. Divide the batter evenly among the prepared muffin cups, filling them about 2/3 full.
  6. Place the muffin tray in the preheated oven and bake for 15 to 18 minutes, or until a toothpick inserted into the center comes out clean.
Coating
  1. In a shallow bowl, mix together the granulated sugar and ground cinnamon.
  2. Once out of the oven, let the muffins cool for about 5 minutes. While they are still warm, brush them lightly with melted butter and roll them in the cinnamon sugar mixture.
Serving
  1. Place the coated muffins on a wire rack and let them cool slightly before serving.

Notes

Store in an airtight container at room temperature for up to 3 days. For longer storage, freeze for up to 2 months. To reheat, microwave for a few seconds or place in a warm oven for 5-10 minutes.
