- In another bowl, mix the buttermilk, egg, and melted butter together until combined.
- Pour the wet ingredients into the dry ingredients. Gently fold the batter together until combined. Be careful not to overmix; it’s fine if there are a few lumps.
- In a small bowl, mix together the brown sugar and ground cinnamon for the swirl.
Cooking
- Preheat a non-stick skillet or griddle over medium heat.
- Pour about 1/4 cup of pancake batter onto the skillet. Immediately, drizzle the cinnamon-sugar mixture in a spiral over the batter.
- Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for an additional minute or two until golden brown. Repeat with remaining batter.
- Top pancakes with cream cheese frosting while they’re still warm and enjoy.
Notes
