Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the mashed bananas and melted butter. Stir in the sugar, egg, and vanilla extract until well combined.
- In a separate bowl, whisk together the baking soda, salt, and flour. Gradually add this mixture to the wet ingredients, stirring until just combined. Avoid overmixing.
- In a small bowl, mix the cinnamon sugar for the filling.
- Pour half of the banana bread batter into a greased loaf pan. Sprinkle half of the cinnamon sugar mixture over the batter. Add the remaining batter on top and finish with the rest of the cinnamon sugar.
- Using a knife, swirl the batter to create a marbled effect.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- While the bread is baking, mix cream cheese, powdered sugar, and milk until smooth for the glaze.
- Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack. Drizzle the cream cheese glaze over the top once cool.
Notes
Store leftovers in an airtight container for 3-4 days. For longer storage, freeze individual slices wrapped in plastic and place them in a freezer bag. Thaw and warm in the microwave or toaster oven.
