Preparation
- Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or non-stick spray.
- In a large mixing bowl, mash the ripe bananas until smooth. Mix in sugar, melted butter, and egg until well combined.
- Stir in vanilla extract, baking soda, and salt. Gradually add flour and mix until just combined.
- In a separate bowl, combine ground cinnamon and brown sugar to create the cinnamon swirl.
- Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon mixture on top. Pour the remaining batter and top it with the rest of the cinnamon mixture, gently swirling with a knife.
- Transfer the loaf to the oven and bake for approximately 50-60 minutes, or until a knife inserted in the center comes out clean.
- Let it cool for at least 10 minutes before transferring to a wire rack. Slice, serve, and enjoy!
Notes
Store leftovers in an airtight container at room temperature for up to 2 days. Wrap tightly in plastic wrap for up to a week in the refrigerator, or slice and freeze for up to 3 months.
