Ingredients

Wet Ingredients
  • 3 ripe bananas, mashed The riper the bananas, the sweeter the bread.
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup butter, melted For a dairy-free option, use coconut oil.
  • 2 eggs Can be substituted with applesauce or flaxseed meal.
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour Can use 1:1 gluten-free flour blend.
  • 1 tablespoon cinnamon
Glaze Ingredients
  • 1/4 cup powdered sugar
  • 1-2 tablespoons milk Use a plant-based milk for a dairy-free option.
Cinnamon-Sugar Mix
  • 1 tablespoon sugar
  • 1 teaspoon cinnamon

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large mixing bowl, mash the bananas thoroughly. Then add the melted butter, sugar, brown sugar, eggs, and vanilla extract. Stir until well combined.
  3. In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix!
Baking
  1. Pour half of the batter into the prepared loaf pan. Sprinkle with the cinnamon-sugar mix, then add the rest of the batter on top and swirl it gently with a knife.
  2. Bake for 50-60 minutes, until a toothpick inserted into the center comes out clean.
Glazing and Serving
  1. While your banana bread cools, mix the powdered sugar with the milk until smooth and drizzle over the cooled loaf.
  2. Allow to cool for at least 10 minutes in the pan before transferring to a wire rack. Slice and enjoy!
