Ingredients
  

Oatmeal Base
  • 2 cups rolled oats
  • 2 cups milk (dairy or non-dairy)
  • 1/2 cup brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup melted butter Can substitute with coconut oil for dairy-free option.
Optional Add-ins
  • 1/4 cup chopped nuts Optional.
  • 1/4 cup raisins Optional.
  • to taste Icing For drizzling, optional.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the rolled oats, brown sugar, baking powder, cinnamon, and salt. Mix well.
  3. In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry mix and stir well to incorporate everything evenly. If adding nuts or raisins, fold them in gently.
Baking
  1. Grease your baking dish with oil or butter, and transfer the oatmeal mixture into it, spreading evenly.
  2. Bake in the preheated oven for about 30-35 minutes, or until the top is golden brown and a toothpick inserted comes out clean.
Serving
  1. Allow to cool slightly before drizzling with icing, if desired. Cut into squares and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 5 days. For longer storage, freeze individual portions for up to 3 months. Reheat in the microwave or oven when ready to eat.
