  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon

  • 2 large eggs
  • 1 cup buttermilk (or regular milk with a splash of vinegar)
  • 1/2 cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
Fruits and Toppings
  • 1 1/2 cups diced fresh peaches (or canned peaches, drained)
  • 1/2 cup brown sugar (for topping)
  • 1/4 cup chopped nuts (optional, for a crunchy element)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or nonstick cooking spray, or line it with parchment paper for easy removal.
  2. In a large bowl, combine the flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon. Whisk until well blended.
  3. In a separate bowl, whisk together the eggs, buttermilk, vegetable oil (or melted butter), and vanilla extract until fully combined.
  4. Gradually pour the wet mixture into the dry ingredients. Stir gently until just combined—be careful not to overmix! Gently fold in the diced peaches.
  5. In a small bowl, mix the brown sugar and chopped nuts (if using) until combined. This will give your bread a delightful crunch on top.
Baking
  1. Pour the batter into the prepared loaf pan, and sprinkle the brown sugar topping evenly over the surface.
  2. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  3. Once baked, remove the bread from the oven. Let it cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  4. Slice and enjoy!

Notes

Store leftovers tightly wrapped in plastic wrap or aluminum foil for up to three days at room temperature, or freeze portions for up to three months. Reheat slices in the microwave for 15-20 seconds or in the oven at a low temperature.
