Preparation
- Preheat the Oven: Start by preheating your oven to 350°F (175°C).
- Prepare the Pan: Grease and flour an 8-inch square baking pan or line it with parchment paper for easy removal.
- Mix the Dry Ingredients for the Cake: In a large bowl, whisk together 1 ½ cups of flour, 1 cup of sugar, 1 ½ tsp of baking powder, ½ tsp of baking soda, and ½ tsp of salt.
- Combine Wet Ingredients: In another bowl, combine ⅓ cup of melted butter, 1 large egg, 1 tsp of vanilla extract, and ½ cup of buttermilk. Whisk until smooth.
- Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry mixture, stirring just until combined. Don’t overmix!
Crumb Topping and Baking
- Prepare the Crumb Topping: In a small bowl, mix ⅓ cup of flour, ⅓ cup of brown sugar, and 1 tsp of ground cinnamon. Then, drizzle in 3 tbsp of melted butter and mix until crumbly.
- Pour the Batter: Spread the cake batter evenly into your prepared baking pan.
- Add the Crumble: Sprinkle the crumb topping generously over the batter.
- Bake: Place the pan in the oven and bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and Serve: Allow the cake to cool in the pan for a few minutes before slicing. Enjoy it warm, preferably with a hot cup of coffee or tea!
Notes
For best results, accurately measure your ingredients and avoid overmixing the batter. Store wrapped in plastic in the fridge for 3-4 days or freeze for longer storage.
