Preparation
- Rinse 1 cup of quinoa under cold water in a fine sieve to remove its natural bitter coating called saponin.
- In a medium saucepan, combine the rinsed quinoa with 2 cups of water or apple juice. Bring it to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes until the water is absorbed and the quinoa is fluffy.
- Stir in the diced apple, ground cinnamon, and sweetener of your choice. Mix well and let it warm through for another 2-3 minutes.
- If using, mix in the nuts or dried fruits until they’re heated through.
- Remove from heat, fluff with a fork, and serve warm in bowls.
Notes
Store any leftovers in an airtight container in the refrigerator for up to a week. For easy reheating, add a splash of water or apple juice to a microwave-safe bowl.
