Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour Use unbleached for best results.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt Enhances flavor.
  • 1 teaspoon ground cinnamon Plus extra for topping.
Wet Ingredients
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs Room temperature is best.
  • 1 teaspoon vanilla extract For added flavor.
Fruits and Nuts
  • 2 cups peeled and chopped apples Use varieties like Granny Smith or Honeycrisp.
  • 1/2 cup chopped walnuts Optional, can be substituted.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Prepare a loaf pan by greasing or lining it with parchment paper.
  2. In a mixing bowl, combine the all-purpose flour, baking soda, salt, and ground cinnamon. Mix well and set aside.
  3. In another bowl, cream the softened butter and sugar together until smooth and light, about 2-3 minutes with an electric mixer.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the flour mixture to the wet ingredients, alternating with some apples. Fold until just combined.
  6. Gently fold in the chopped walnuts if using, then pour the batter into the prepared loaf pan.
  7. Sprinkle a little cinnamon on top for finishing touch.
Baking
  1. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

Choose apples that hold their shape. Store in plastic wrap for up to 3 days at room temperature, or refrigerate for up to a week.
