Preparation
- Preheat your oven to 350°F (175°C). Prepare a loaf pan by greasing or lining it with parchment paper.
- In a mixing bowl, combine the all-purpose flour, baking soda, salt, and ground cinnamon. Mix well and set aside.
- In another bowl, cream the softened butter and sugar together until smooth and light, about 2-3 minutes with an electric mixer.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the flour mixture to the wet ingredients, alternating with some apples. Fold until just combined.
- Gently fold in the chopped walnuts if using, then pour the batter into the prepared loaf pan.
- Sprinkle a little cinnamon on top for finishing touch.
Baking
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
Notes
Choose apples that hold their shape. Store in plastic wrap for up to 3 days at room temperature, or refrigerate for up to a week.
