Method
Prepare the Dough
- In a mixing bowl, combine 1 cup of flour, granulated sugar, salt, and active dry yeast.
- Gradually mix in warm milk and eggs until well combined.
- Add the remaining flour and knead the dough with your hands for about 5-7 minutes, until smooth and elastic.
Add Butter
- Gently incorporate the softened butter into the dough and continue kneading until fully integrated.
First Rise
- Place your dough in a greased bowl, cover it with a clean cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
Make the Filling
- In a bowl, combine the brown sugar and ground cinnamon. Mix well.
- Toss the diced apples lightly in this mixture for an evenly distributed flavor.
Shape the Babka
- Roll out the risen dough on a floured surface into a rectangle (approximately 12x18 inches).
- Spread the apple mixture evenly over the dough, leaving about an inch around the edges.
- Starting from one long side, roll the dough tightly into a log.
Twist & Place in Pan
- With a sharp knife, slice the log in half lengthwise to reveal the filling.
- Twist the two halves together, and place in a greased loaf pan, tucking the ends underneath.
Final Rise
- Cover the loaf pan and let it rise again for 30 minutes while you preheat your oven to 350°F (175°C).
Bake to Perfection
- Bake the babka for 30-35 minutes or until golden brown.
- A wooden skewer inserted in the center should come out clean.
Cool & Serve
- Allow it to cool slightly before slicing. Drizzle with icing if desired!
Notes
For nut-free version, omit any nuts. For dairy-free alternative, use plant-based butter and milk. Give your dough ample time to rise for a fluffy texture. Avoid over-kneading the dough to prevent a dense babka.
