Ingredients
  

Vegetables
  • 1 small head green cabbage, shredded Can be replaced with purple cabbage for a colorful twist.
  • 1 cup shredded carrots
  • 1/2 medium red onion, thinly sliced
  • 1 cup fresh cilantro, chopped
Dressing
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon honey or agave syrup Optional sweetness.
  • to taste Salt Use your preference.
  • to taste Black pepper Use your preference.

Method
 

Preparation
  1. Shred the green cabbage into thin strips and place it in a large mixing bowl.
  2. Add the shredded carrots and thinly sliced red onion to the bowl.
  3. Rinse fresh cilantro under cold water, chop the leaves, and add them to the bowl.
Dressing
  1. In a separate small bowl, whisk together the lime juice, olive oil, honey or agave syrup, salt, and black pepper.
Combine
  1. Pour the dressing over the vegetable mixture. Toss everything together until well-coated.
  2. Taste and adjust seasoning as needed.
  3. Let the slaw sit for about 10 minutes before serving to meld flavors.

Notes

Store in an airtight container in the refrigerator for up to 3 days. Best enjoyed cold or at room temperature. Consider keeping the dressing separate until ready to eat for optimal freshness.
