  • 1 pound shrimp, peeled and deveined
  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 2 limes, juiced
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

Preparation
  1. Start by gathering all the ingredients. Peel and devein the shrimp, rinse the black beans, and chop the cilantro.
Cooking
  1. In a large skillet over medium heat, add the olive oil. Once hot, add the shrimp and season with salt, pepper, and garlic powder.
  2. Sauté the shrimp for about 3–4 minutes or until they turn pink and opaque. Be careful not to overcook!
  3. Once the shrimp is cooked, stir in the black beans and cooked rice. Continue to cook for another 2–3 minutes to warm through.
  4. Remove the skillet from heat, and mix in the lime juice and chopped cilantro. Stir well to combine everything and allow the flavors to meld.
  5. Dish out the Cilantro-Lime and Black Beans Shrimp and Rice and garnish with extra cilantro or lime wedges if you like.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat on the stovetop or microwave, adding a splash of water or broth to maintain moisture.
