- Season the chicken thighs with salt and pepper on both sides.
- In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken thighs skin-side down and sear until golden brown, about 5-7 minutes.
- Flip the chicken and add the sliced onion and minced garlic to the pan. Sauté for 2-3 minutes until fragrant.
- Pour in the apple cider and add the thyme and bay leaf. Bring the mixture to a gentle simmer.
- Lower the heat, cover the skillet, and let cook for about 25 minutes, or until the chicken is cooked through and fork-tender.
- Remove the bay leaf and serve the chicken hot, spooning the flavorful sauce over the top.
Notes
For substitutions, use apple juice mixed with a splash of vinegar if you don’t have apple cider. Ensure the chicken reaches an internal temperature of 165°F to avoid undercooking.
