Chocolate Zucchini Bread: A Deliciously Sweet Surprise

When you think of comfort food, chocolate is likely one of the first things that comes to mind, right? Now, imagine combining that luscious chocolatey goodness with the goodness of zucchini! Yes, you heard it right—Chocolate Zucchini Bread is here to bring joy to your taste buds.

Ingredients
  

  • 2 cups grated zucchini about 2 medium zucchinis
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup chocolate chips optional for an extra chocolatey kick!

Instructions
 

  • Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  • Prepare the Zucchini: Grate the zucchini using a box grater or food processor. If desired, place the grated zucchini in a clean cloth to squeeze out excess moisture.
  • Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, salt, and cinnamon until well combined.
  • Combine Wet Ingredients: In another bowl, beat together the vegetable oil, eggs, and vanilla extract until smooth.
  • Combine Wet and Dry Mixtures: Add the wet ingredients to the dry ingredients, gently folding them together. Be careful not to overmix!
  • Add Zucchini: Stir in the grated zucchini until evenly distributed throughout the batter. If you’re feeling indulgent, add chocolate chips at this stage!
  • Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake in the preheated oven for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  • Cool and Serve: Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
