Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
Prepare the Zucchini: Grate the zucchini using a box grater or food processor. If desired, place the grated zucchini in a clean cloth to squeeze out excess moisture.
Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, salt, and cinnamon until well combined.
Combine Wet Ingredients: In another bowl, beat together the vegetable oil, eggs, and vanilla extract until smooth.
Combine Wet and Dry Mixtures: Add the wet ingredients to the dry ingredients, gently folding them together. Be careful not to overmix!
Add Zucchini: Stir in the grated zucchini until evenly distributed throughout the batter. If you’re feeling indulgent, add chocolate chips at this stage!
Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake in the preheated oven for 45-50 minutes or until a toothpick inserted into the center comes out clean.
Cool and Serve: Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
